Connar’s soccer cake

My aunt came to me and asked me to make a cake for my cousin’s 10th birthday and just as my previous post, there was no way I could say no! Knowing that he loved soccer, I googled some soccer cakes for inspiration and went to work!

The top soccer ball tier is a chocolate cake layered and covered with white chocolate ganache (yum) and the bottom tier is a vanilla cake layered and covered with super chocolatey chocolate buttercream.

and here’s the love of my life helping me snap some artsy fartsy photos of the finished product.

Definitely a fun cake to make and I was surprised with how quick it was to put all together. Not sure whether it was the planning in advance, Sean’s help, or the different type of fondant I used on this cake or maybe it was a combination of all those things.

Ps. I love white chocolate ganache … mm.. :P

Marielle and Dan’s movie themed wedding cake!

Marielle, a long time friend of mine, approached my friend Jenn, from itsthebestofboth, and I a week before her wedding and asked us to make the ever intimidating WEDDING CAKE and wedding cupcakes. Here were a few thoughts that ran through my head:

  • I’ve never made a wedding cake before
  • I’m not ready for a wedding cake
  • I’ve never collaborated with a person to make a cake before
  • What if Jenn doesn’t like my ideas and vise versa
  • What about just cupcakes?!?!

But Marielle being such a good friend (pretty much a sister) to me growing up, there was no way I could say no. After a lot of trial and error, the cake actually came together nicely and fit so well with Marielle & Dan’s movie themed wedding. The event planner displayed the cake backwards so that the film strips aren’t hanging off the front of the cake but oh well, from afar it still looked pretty dang awesome! First wedding cake checked off the bucket list!

 

The cupcakes were also movie theme inspired! Caramel popcorn & Milk duds mmm… and on the right is the finished product in my very clean kitchen hahah.

More basketball cookies!

I was contacted by my friend, Jen an up and coming event planner, about a birthday party she was planning that was coming up. I jumped at the opportunity and automatically said yes!

The order was:
1 white cake
10 Basketball cookies
10 Jordan 11 cookies
12 cupcakes
12 cake pops

This was the most that I’ve had to make for one event and it was definitely a struggle but so worth it. Jen’s set up was on point and my pastries fit so nicely with everything she did. I just can’t get over how pretty it looked all together!

Oscar’s 2nd Annual Basketball Tournament

This past Saturday was Oscar’s 2nd annual basketball tournament. The Lintag family has done such an amazing job organizing this annual tournament to commemorate Oscar’s life.

Now for the goodies! Here’s another picture of the basketball sugar cookies that I made for the tourney:

And cupcakes! I made yummy cupcakes!
Quick little story: I was on stage playing with some of the kids (lol I’m still 5 at heart ok?) and I heard one of the players commenting on how he had one of the most amazing cupcakes he’s ever had then began to describe the nutella one…. I shyly blushed under my hair and ran to tell Sean’s mom all about it. She was just as excited as I was and told me that some of the players even asked if the cupcakes were made by the same person from last year…. baking ego boost! :D

This one is a vanilla cupcake with nutella frosting:

Nutella Frosting Recipe:
1 cup unsalted butter
3½ – 4 cups confectioner’s sugar, sifted
½ cup Nutella
1 tbsp vanilla extract
2 tbsp half-and-half, heavy cream or whole milk (tbh I used 2% and it was fine..)
pinch of salt

Cream together butter and sugar first. Slowly mix in nutella, cream, & salt. Then voila!

Here’s the chocolate cupcake with peanut butter frosting. I can’t stress enough how much I love peanut butter frosting.. mm..

Peanut Butter Frosting Recipe:
1/2 cup butter, softened
1 cup creamy peanut butter
3 tbsp milk
2 cups confectioners’ sugar

Cream together peanut butter and butter first then slowly add in the icing sugar and milk….. then you have heaven :P

Basketball cookies!

Tomorrow is Oscar’s 2nd annual memorial basketball tournament and every year so far (meaning 1 lol!) I’ve made it my duty to donate some yummy desserts for the family to sell. Last year I made a lot.. and I mean a lot of cupcakes. This year I’m toning it down a bit on the cupcakes and decided to donate some of my new found (baking/ decorating) love: sugar cookies!!!

Sugar Cookie Recipe:

2 3/4 cups all-purpose flour
1 tsp baking soda
1/2 teaspoon baking powder
1 cup butter, softened
1 1/2 cups white sugar
1 egg
1 tsp vanilla extract
1/2 tsp vanilla bean powder

Preheat oven to 375 degrees F. Stir together flour, baking soda, and baking powder and set aside. In a different bowl, cream together butter and sugar until smooth. Beat in egg and vanilla then gradually blend the dry ingredients in. Bake for 8-10 minutes.

Didn’t it turn out soooooo cute?! I don’t know if it’s ok in the baking world to admire your own work.. but I can’t help it! lol. I’ll post up all the goodies in full tomorrow. I just couldn’t wait to share this little bugger! So excited for tomorrow… *hint* nutella frosting… mmm.. :P

Diamonds are forever

Definitely one of the coolest looking cakes I’ve made. It was the first time I used chocolate ganache instead of buttercream underneath the fondant and I really liked how the edges came out way sharper. Unfortunately I was working late that night and didn’t get to try the cake but I heard good things!
